This is so delicious, and moreish that you will find you need to cook far more than you think you will eat. It can replace meat for a great vegetarian meal served with a salad.  I used baby eggplant which take around 30 minutes to cook. If you use large eggplant make sure you cook them till they are completely gooey and the bouncy spongy texture is gone.

Halve eggplants horizontally and make diagonal cuts through flesh not completely through.
Place on oven tray and drizzle with olive oil and season with salt and pepper.
Place in oven Fan Grill (with steam if available) 200c for 30- 40 minutes or until golden and gooey.
In a saucepan place peanut butter, soy sauce, mirin Sesame Oil, lime juice and chilli flakes and heat through stirring to form a sauce.
Remove eggplant from oven. Top with sauce, sprinkle with sesame seeds, spring onion and parsley .
