The most valuable function of your Microwave combination oven, is its ability to combine oven and microwave functions together to achieve oven results in less than half the cooking time. This recipe is a great example of how you can achieve a great healthy and good looking meal so easily.

The type of vegetable you use for this recipe can vary depending on the season. Kumara, Pumpkin, Beetroot, Eggplant, Capsicum, Zucchini, Parsnip, Carrot,Leek, Red or Brown Onion can all be interchanged depending on what you have available.

Chop vegetables into 2.5cm cubes, drizzle with olive oil and sprinkle with spices. 

Preheat oven  to 230C and set to  fan assisted grill with Microwave ( For Asko use 180W for 2 cups vegetables- 360W for 4 cups vegetables, For Smeg use 200W for 2 cups and 400W for 4 cups)  cook for 16 minutes – or until cooked through and golden brown.  

Remove from oven and toss through spinach leaves and feta to serve .
