These morsels are extremely moreish and a bit of a change from the usual sausage roll flavour. Have them on their own or with a flavoursome chutney or sauce. We used the Smeg Mincer attachment for the Stand Mixer to mince the filling for these rolls but you can finely chop or use a food processor to mince it as well.
Adding Steam to the oven cavity during the cook makes for crisper, more puffy pastry while keeping the filling moist.
This recipe is written for the Smeg Steam Assist oven, but can be cooked in any oven with a steam assist feature.

Preheat your Smeg Steam Assist Oven to Fan Assisted Static+ Steam 195c and set the timer for 25 minutes. Add water when prompted by the oven.
Using the largest disc for the Mincer attachment for the Smeg Stand Mixer, mince together the chicken and choritzo. Alternatively add both to a food processor and process until a chunky mince consistency. You dont want to over process and turn it into a paste.
Add the meats to the finely diced onion and garlic and add the rest of the seasonings and mix well.
Cut a sheet of pastry in half and brush one long edge with beaten egg.
Lay approximately 3/4 cup of the minced meat mixture into a log shape along the pastry and then roll the pastry up, sealing where the pastry meets and keeping the sealed edge to the bottom.
Repeat with remaining pastry and meat mixture.
Brush each log with beaten egg, then cut each log into 5-6 pieces.
Place on baking paper lined oven tray and sprinkle with sesame or nigella seeds if using .
Place in preheated oven and cook for 25 minutes or until golden brown.
1 onion finely diced
3 cloves garlic, finely diced
500g boneless chicken thighs
150g choritzo sausage
1t smoked paprika
1t harrissa spice
1/2 t black pepper
1/2 t salt
2 slices white bread soaked in 1/3 cup milk and mashed.
3 sheets puff pastry
white and black sesame seeds or nigella seeds (optional)
